The sauce was perfect, but I put in too many veggies and it wasnt saucy enough.

Pick your favourite Sharwoods sauce (Indian or Chinese, they're the best brand I've found for full flavour).

  • 500g chicken breasts
  • 500g onions (weighed with peels so less after)
  • 3 cloves garlic
  • Additional veggies based on what works for the sauce
  • E.G. for the Chinese ones, sweet peppers and chillies
  • In this attempt the tomatoes were superfluous and too much
  • So do sweet cherry tomatoes OR sweet peppers
  • A slice of butter and 1tspn olive oil into a grill pan, heat and melt
  • Add onions, fry and mix on low medium heat for 15mins. Add a little water every 5 mins or so to prevent burning.
  • After 15 mins add chopped garlic cloves, 1 tspn sugar, and other vegetables
  • Continue frying, mixing, and adding water every 5 mins for approx 30 more min
  • Done when onions are caramelized brown
  • While veggies are cooking, soak 75g basmati or jasmine rice in 150ml water (at least 30 mins soak), along with approx 5 cloves, a little cinnamon and 5 cardamom pods.
  • After soaking simmer on low heat approx 8 mins. All the water should absord with no extra left
