Ehhhhhhhhhhhhh, it is kind of troubling to say “I will only use your accurate pronouns if you earn it, and will punish you for your misdeeds by misgendering you.” The ex cheating is bad and indefensible. But just because she is a piece of shit doesn’t mean she’s not a woman.
I do think OP is NTA, because “wife” might be misleading if she is talking to other people, but it’s not because the ex somehow hasn’t earned the right to her pronouns. (A better solution would be for OP to use “spouse.”)
