But the most important thing is making Halal Guys which I've never been to but tasted amazing. And this one needs less uncommon shit like real limes and sumac.

Rice: 2 tbsp of butter in a pan with 1/2 tsp turmeric 1/4 tsp cumin n toast those spices, put the rice in and toast it, then put in 1 1/2 cup rice and toast the rice, then 2 1/2 cup chicken stock(use the powder) in there or transfer to a rice cooker. The maillard reaction will develop more complex flavors in the spices and the rice if you do this before adding water.

Chicken: 2 lbs chicken thigh(thigh costs less, more flavor, and takes more temperature before drying out), 2 tbsp lemon juice, 1 tbsp fresh oregano(who tf has that, 1tsp dried), 1/2 tsp coriander(coriander seed powder, not leaves), 3 garlic cloves, salt n pepper blended up then put on the chicken. The recipe said to add 1/4 cup olive oil which I did anyways knowing what would happen and all the seasonings ended up at the bottom with all the needless oil so don't do that.

White sauce: 1/2 cup mayonnaise, 1/2 cup plain yogurt, 1 tbsp sugar, 2 tbsp vinegar, 1 tsp lemon juice, 1/4 cup fresh parsley
