I feel really bad for child actors that grow up in the public eye. Every ill-advised fashion choice and awkward cosmetic decision will haunt you forever.
That said, glad Maisie seems to be enjoying it because I cannot imagine her having much of a career after GOT.
From what I've seen she seems fine for the role (youtube clips) and appears to other work listed on IMDB. Her star didn't take off like Peter Dinklage's, but looks like she'll at least have steady work in the UK for awhile.
Dinklage was well known at least in the States prior to GOT. The adults on that show were all established actors in their home countries, only the kids were newbies.
As for Maisie. Eh. The character fits her strengths but doesn't have a lot of range even in the books. She pretty much just glowers all the time.
I dispute your definition of 'sexually mature.' The legal age of eighteen does not make a female sexually mature. Ability to breed does not mean a female is sexually mature. A thirteen year old can become pregnant and give birth. That doesn't make her sexually mature. Neither Maisie nor Sophie look even remotely sexually mature unless you slap on a ton of makeup, dress them up and pose them like Lolitas.
Some males of varying ages get erections looking at closeups of Aaron Rodgers taking a shit. I'd puke at that too.
Age of consent is 16 in the UK anyway, so Sophie could have been fucking since as far back as season 2. Possibly even before that, because when I was a teenager, none of the kids my age gave two shits about the age of consent.
