My girlfriend has put on around 5-7kg in the last few months and is very clearly upset about it. She has made goals to lose weight by going to the gym, however she insists on following these weight-loss diets which require her to starve herself (under 500 calories) for 2 days a week. She has been following this diet for the last few weeks and has seen no progress, she has in-fact gained weight instead. I notice on these low calorie days she is very on edge and easily upset.
I am avidly into body-building and gym and have recently lost a lot of weight myself, so I am somewhat knowledgeable on the subject. I mentioned that starving yourself for two days probably isn't that good for your physical and mental health and that eating good food, counting your calories and eating slightly under your daily calorie intake is the best way to go. I say this as lightly as possible because this is a very touchy subject to her.
Whenever I try to give advice like this, she accuses me of calling her fat and that I want her to look like the girls at my gym (?). Keep in mind I have never mentioned her weight, or weight gain for that matter. I only want to help her reach her goal of losing weight because she is very upset about it. I feel like I am walking on egg-shells because she reacts like this no matter what I say or how lightly I put it. I feel it would be better off if I didn't say anything, but when she brings up the subject I can't help but give my two cents because this subject really hits home for me.
I really want her to be happy and confident and I feel this is putting a strain on our relationship. Is there anything I can say without setting her off? Am I in the wrong for trying to give advice?

They're still hungry because their body has adapted to consuming ungodly amounts of food. They store calories because they're eating at a surplus. It's not rocket appliances.
Those are merely hypotheses, not facts. Even if the reason someone eats too much is 'they are used to it' as you surmise, it doesn't explain how they stop, unless you think will power is unlimited, which we know for a fact is not.
Also, your hypothesis don't really explain why obesity has gotten out of control over time or why it's more prevalent amongst the poor. But then you have a bunch of 15 year olds going "lol i weigh 70 pounds and i literally shovel mayonnaise into my mouth all day" without understanding that there's more to it than X minus Y. Some people are cursed with a body that really wants to store fat, so they have to take considerable effort to not become fat.
But really, once your BMI is nearing obese, cut it the fuck out with the food. I don't care how efficient your GI tract is or how low your BMR is, you're going to die young after being a taxpayer burden for a decade if you don't limit your portions.
The actual problem is fatasses sucking down 3,000 calories per day in liquids alone and thinking they're all good because they drink diet soda. Then you have Auschwitz fags who eat 1500 calories per day in fruit roll ups and hot dogs and think they're pigging out.
I'm not talking about metabolism, although 700 calories a day is a fucking lot when considered over the course of a year. 73 pounds, to be specific. Add 73 pounds to almost anyone and they'll be obese.
I'm mainly talking about how our body decides when to create/fill a lipocyte and where, neither of which we have the answer to. Genetics are pretty much the sole cause of where fat goes - men get it on their abdomen, women get it basically everywhere else - but as to the exact reasons behind lipogenesis and lipolysis, those are a mystery.
The majority of people are going to be nearly identical. Eat whatever you want, don't go over a certain number, and you're good. But some people simply have a higher base percentage of fat for whatever reason. The most obvious example of these being boobs. Some girls have an A cup, some girls have an H cup. The difference is how much fat their body decided to put there. Less lucky people will get that extra fat on their neck or thighs or whatever. Those people are going to have to work harder to not be a big fat fatty. It sucks, but them's the breaks.
All I'm saying is two people of equal weight and height can follow the same diet and lose different amounts of fat in different places, and some people won the reverse lottery of fat storage.
Even in terms of unequal fat distribution it does not answer the question of obesity. Some people have bodies where fat is stored more easily on the sides, some people have fat stored more easily in the front. However, if both people follow proper nutrition they will lose fat and not qualify as obese. Some people will get muffintops easier than others, but it takes serious neglect and bad decisions to become obese/heavily overweight. A person can have genetics that can lead to certain undesirable aesthetics, but even this person can avoid looking extremely overweight and obese by following a relatively healthy lifestyle like anyone else. Saying it's easier/harder for some people to get fatter is mostly irrelevant, because the levels of fatness we are talking about here transcends mere body type. Barring certain genetic conditions/mental illnesses, people with any body type can control what they put in to their system.
Look, following calories in calories out doesn't necessarily make someone healthier, although it often does. I hate seeing this type of contrarianism against cals in/cals out because the arguments people are making against it are so pedantic and they miss the overall point, as well as encouraging people to not be responsible for their own weight.
This doesn't mean shame and call out the fatty. This means not exempting people of their own responsibility to take care of themselves. The epidemic of obesity we see here in the USA is directly correlated with the rise of fast food and sedentary lifestyles, not related to an increase of genetic disorders. Perhaps there's an argument to be made about the mental effects of advertising and socialization on the public, but that's another discussion.

Of course it is true as a matter of physics, but it doesn't explain anything about why fat people are still so hungry, or why they store calories and not burn them.

Those are merely hypotheses, not facts. Even if the reason someone eats too much is 'they are used to it' as you surmise, it doesn't explain how they stop, unless you think will power is unlimited, which we know for a fact is not.
Also, your hypothesis don't really explain why obesity has gotten out of control over time or why it's more prevalent amongst the poor. Suffice to say, this is way too much of an effort thread to have in drama, especially since I'm typing this while I shit. Everyone should check out competing theories like the insulin hypothesis, set point hypothesis, the metabolic effects of sugar etc.

Food is prevalent and easily acquired in countries like the US.
Cheap food tends to be heavy on carbs and sugar.
Carbs and sugar have higher caloric density than fruits/vegetables/meat.
So poor people buy cheap food, out of necessity, that food is dense with calories, they eat more calories per gram than someone who can afford fresh fruits/vegetables/meat.
Seems pretty reasonable to me.

Over time, the stomach increases its capacity to adapt to increased food consumption. Look it up, dum dum. The fact that excess calories are stored as fat is also a fact. Just because there are other factors at play doesn't mean those factors are somehow "competing" with calories in/out. Insulin doesn't magically create surplus calories to store out of thin air.

Food is a dangerously addictive vice. Especially if it has high sodium or sugars. You'll end up rewriting your emotional response to respond positively once you build that addiction. Additionally, the increased insulin production will lead to a biological necessity to consume more sugars.
Genetic predisposition or overeating causes their BMR to plummet. It's just another external factor that needs to be accounted for in consuming calories.

Le calories reference is a way for people to pretend they know about a topic when they really don't. It makes sense, mathematically. And yes, it is true that if you eat fewer calories than you expend, your weight will go down. But then you have a bunch of 15 year olds going "lol i weigh 70 pounds and i literally shovel mayonnaise into my mouth all day" without understanding that there's more to it than X minus Y. Some people are cursed with a body that really wants to store fat, so they have to take considerable effort to not become fat.
But really, once your BMI is nearing obese, cut it the fuck out with the food. I don't care how efficient your GI tract is or how low your BMR is, you're going to die young after being a taxpayer burden for a decade if you don't limit your portions.

I'm not talking about metabolism, although 700 calories a day is a fucking lot when considered over the course of a year. 73 pounds, to be specific. Add 73 pounds to almost anyone and they'll be obese.
I'm mainly talking about how our body decides when to create/fill a lipocyte and where, neither of which we have the answer to. Genetics are pretty much the sole cause of where fat goes - men get it on their abdomen, women get it basically everywhere else - but as to the exact reasons behind lipogenesis and lipolysis, those are a mystery.
The majority of people are going to be nearly identical. Eat whatever you want, don't go over a certain number, and you're good. But some people simply have a higher base percentage of fat for whatever reason. The most obvious example of these being boobs. Some girls have an A cup, some girls have an H cup. The difference is how much fat their body decided to put there. Less lucky people will get that extra fat on their neck or thighs or whatever. Those people are going to have to work harder to not be a big fat fatty. It sucks, but them's the breaks.
All I'm saying is two people of equal weight and height can follow the same diet and lose different amounts of fat in different places, and some people won the reverse lottery of fat storage.

Even in terms of unequal fat distribution it does not answer the question of obesity. Some people have bodies where fat is stored more easily on the sides, some people have fat stored more easily in the front. However, if both people follow proper nutrition they will lose fat and not qualify as obese. Some people will get muffintops easier than others, but it takes serious neglect and bad decisions to become obese/heavily overweight. A person can have genetics that can lead to certain undesirable aesthetics, but even this person can avoid looking extremely overweight and obese by following a relatively healthy lifestyle like anyone else. Saying it's easier/harder for some people to get fatter is mostly irrelevant, because the levels of fatness we are talking about here transcends mere body type. Barring certain genetic conditions/mental illnesses, people with any body type can control what they put in to their system.
Look, following calories in calories out doesn't necessarily make someone healthier, although it often does. I hate seeing this type of contrarianism against cals in/cals out because the arguments people are making against it are so pedantic and they miss the overall point, as well as encouraging people to not be responsible for their own weight.
This doesn't mean shame and call out the fatty. This means not exempting people of their own responsibility to take care of themselves. The epidemic of obesity we see here in the USA is directly correlated with the rise of fast food and sedentary lifestyles, not related to an increase of genetic disorders. Perhaps there's an argument to be made about the mental effects of advertising and socialization on the public, but that's another discussion.
