Eastern Europe had civilization for like 2000 years before that point. They had pretty good records, you could estimate from things like synagogue numbers and size, the large numbers of Jewish towns/shtetl, and governments still estimated population occasionally for things like conscription or taxation purposes, even if only at a local level.
