4 cups apple cider.
1 cup bourbon.
1/2 tsp allspice (or 1/4 tsp clove).
1/4 tsp ginger.
1/4 tsp cinnamon.
1 tbsp butter (optional but worth it).
4 to 6 cinnamon sticks. (For garnish).
Heat cider to a simmer and add spices and butter, and stir. After 4 minutes or so, reduce heat to low and add bourbon. When it starts to steam, remove from heat. DO NOT BOIL.
Alcohol will boil away very easily, as it has a much lower boiling point than water.
Ladle into 4 to 6 mugs, add a cinnamon sticks to each.
Bourbon is less earthy than Irish or Scotch whisky. Not as smooth as Canadian (which is way too sweet for me).
Bourbon mixes pretty well, too. Manhattan (bourbon, sweet vermouth, bitters), Old-Fashioned (bourbon, club soda, bitters, sugar), Mint Julep (bourbon, powdered sugar, lots of crushed ice and mint sprigs. Some people muddle mint leaves into the drink, some don't), Whisky Sour (bourbon, lemon juice, simple syrup), New York Sour (same, but lay a tablespoon of red wine on the top), add club soda to a Whisky Sour and you've got Tom Collins. Revolver (bourbon, Kahlua, orange bitters). Also, subbing bourbon for vodka in a bloody mary works quite well.
For a shot, Maker's Mark, Bulleit or Knob Creek. Smooth and smoky and good bourbon flavor (the maltiness that (I think) comes from carmelizing some of the malted barley prior to the mashing process (leeching sugars from malted barley using hot water)).
My good friend's father had a rule: Know what your friends like to drink, and always keep some on hand for when they come over.
