You can run something called a packet capture on the Alexa's internet traffic. This shows the all the data sent to and from the device. I haven't looked at the Alexa, but I have looked at the Google home, since I was able to get it running on my raspberry pi. Besides sending data when you say their keywords, they only download software updates and do some small stuff like updating the time. Sure they could just start sending everything you say but people would notice that and they'd get tons of shit.

Yeah it's encrypted (thank God), but you can still tell a lot from when it sends packets and how large the packets are. If they were sending back everything you say, then there would either constant smaller packets or occasional large transfers. I saw neither of those when I tested it.
I'd be worried about it if it wasn't encrypted, because then it would be open to MITM attacks. They're fairly secure, but they are dumb.

There's no way they're collecting data outside a small subset of targeted individuals.
