The most impressive thing to me is that in each of his series he creates a different magic system. Steelheart was a good post apocalyptic superhero style series and Stormlight is really interesting, especially the new ones that are basically set in a magical old west. Unlike a lot of authors (couch George R R Martin), he can write in many different universes.

The Mistborn trilogy is pretty good though. It's sort of like if Charles Dickens wrote The Matrix fanfic. Amateurish prose and YA-ish characters, but a solid story where even the dull bits eventually have a memorable payoff.
It starts good, gets better, then Jordan started milking it and it took a lull. Then he realized he was gonna die and started to write good shit again. Then he died and Sanderson finished it off nicely.
They're fantastic, but books 7-10 have about 100 pages of actual story in there. You can probably just read the wiki for all of those except the end of book 9.
The idea of GRRM pulling a Robert Jordan has become such a meme at this point that Sanderson had to officially comment that he hasn't been approached and wouldn't do it even if he was.
He probably won't, Sanderson is actually fairly religious and even though he's lightened up about it somewhat in regards to his writings, I believe he's on record saying that he wouldn't be a good fit for GoT.
