Human CO2 production mathematically explains global CO2 levels rising, and CO2 levels have a strong historical correlation with global mean temperatures. We know both historic CO2 levels and global mean temperatures with a high degree of accuracy from sources like ice sheet cores.
In reality it's unlikely that Climate change will lead to extinction, more along the line of mass famines, more extreme weather and a shit ton of deaths, but unlikely it will completely wipe out humanity in and of it self.
