Probably because if we can start creating organic material like that effectively, the first thing we'd probably do is not eat it and figure out how to make some sort of prosthetic out of it.

Its getting here. Alternatives are in the market already. Try the Impossible Burger, i did and it convinced me that the future is animal meat free.
