What it means when used online has a bit more negative, as it usually references someone dealing with something in a way that reflects poorly on themselves. Like someone coping their depression with excessive drinking or drug usage. Taking it one step further and applying it to dating discussions specifically, it means someone dealing with dating difficulties in a poor way.

If someone uses the term cope unironically, they're usually mocking the OP for coping with their dating problems in a way that ultimately won't solve the problem, as they're too genetically unattractive and any attempt to fix it is just cope.
