Why do some redditors care about the Israel Palestine conflict so deeply? They seem to care about it even more than they care about their local issues.
The palestine/israel debate isn't a reddit thing, and we should never complain about it. The Gaza Strip outputs more drama per square foot than any other place on earth.
Because American right supports Israel for weird religious reasons and hates Muslims for 9/11, so American left hates Israel and loves Muslims.
I can contrast it to Russia for example, where the last time I checked (about 10 years ago) nobody cared much because the left liked Jews (on account of intelligentsia having a lot of them) and the right low key disliked them (for the same reason) but disliked Muslims even more, so it balanced out.
The UK appears to follow the US hangups unthinkingly. How it is in the non-English speaking Europe?

It's a pet conflict for Westerners because slacktivism of the sort that mayos like won't lead to any uncomfortable conclusions. Suppose you're a mayo and you feel like making the world a better place through brave tweeting. What do you do? If you decide to focus on say, China, you might actually have to do something like boycotting Chinese goods, and that's like totally yikes because they make everything and you'd have to sacrifice your quality of life. When Israel is concerned, you can pretend you were going to buy that Jewish soda thing and not buy it and bang, you're part of The Resistance by boycotting Israeli goods. It's also easy to be well informed because of efforts made by various groups whereas with something like China you'd have to read between the lines occasionally and look for information.
