But I can't imagine why Google's apps wouldn't work on open-source Android, they probably just won't come pre-installed, which is fine by me because I only want Gmail and Maps.
He is. Android is open source so Google can't prohibit someone from using it, however they won't provide their apps nor any support since they have to cut business ties with Huawei.
This probably means Huawei will have to make some changes to the OS and install their own app store, maps, etc., which will probably hurt their sales in Europe but have no impact in Chinese market really. They could also lose some other features and validations (water resistance ratings? widewine support? not sure).
The more experienced users can still most likely sideload the apps like you have to on say Chinese tablets that don't have global versions.
