I started to post this one yesterday under the title "Local man EXTREMELY upset about onion-cooking nomenclature," but then I felt bad that he had Asperger's right in his username, so what did everyone else in that thread expect?
He's technically right though. While people do call sweating and browing onions caramelizing the actual technique requires cooking on low heat for a long period of time. If you do it right the onions wont change color, just turn translucent and they'll basically melt in your mouth
Most of today's fancy foods used to be poorcel food. Do you think a rich person would eat frogs, snails, lobsters, rotten eggs, or mushrooms? Onions are at least honest and not disgusting.
The point is that only starving people would try to eat 90% of the shit that today, with proper preparation, is considered to have "interesting taste".
If a recipe does say to caramelize onions for 5 minutes then you should just cook the onions for 5 minutes. They probably misused the term and I wouldn't trust either but you definitely shouldn't actually cook them for 45 minutes for that recipe like the op is saying.
