He's technically right though. While people do call sweating and browing onions caramelizing the actual technique requires cooking on low heat for a long period of time. If you do it right the onions wont change color, just turn translucent and they'll basically melt in your mouth

If a recipe does say to caramelize onions for 5 minutes then you should just cook the onions for 5 minutes. They probably misused the term and I wouldn't trust either but you definitely shouldn't actually cook them for 45 minutes for that recipe like the op is saying.
