I somehow now understand why people still play that disaster of a game

What people miss about Bethesda games is that they are genuinely more 'interactive' than most others. Just in the way that you can basically pick up anything, open any door that isn't clearly boarded off, and there are all sorts of little interactables all over the map from the sawmills to butterfly hunting and mining ore.
None of these things are particularly fun. But the fact that they're there really fills the games out. It's basically the only thing they really have going for them. Witcher is a better written, better looking, more mature, and more competent game on every imaginable level but it feels a lot less 'personal' when you're playing it.
Just IMO, that's the winning formula. Their games are actually very immersive when they aren't crashing, charging you money, sucking and lagging.

So while the formula worked with Morrowind and Oblivion.... the lazy fucking approach to writing in Skyrim resulted in a game that, compared to it's predecessors, has not a single memorable quest or moment in the entire fucking game.
You can play for 100 hours, think back on it, and realize that nothing stands out.

But if somebody wanted to step up and compete with them, I think they'd definitely need to add modding support and a ton of interactive environmental features.

3 is barely a finished game. It's a glorified tech demo with an amateur film-school project level plot slapped on. It's laughably bad. New Vegas clearly took the groundwork that was laid there and made it into a real game.
Fact of the matter is that Fallout 3 is a badly written and extremely shallow game. Beyond the two major quest hubs there is almost nothing to do all over the map, which is itself a badly pasted together series of repeating building debris and metro tunnels. So badly pasted together that it's easy to literally get lost and not remember which direction you came from because everything looks exactly the same.
Add to that the fact that it's unbalanced to hell and back, varying from spongey enemies that take 15 head shots to kill, to virtually no challenge at all. And the whole thing is tinted with a disgusting shade of snot-green.

The Mojave feels like a place that people actually live in. An easy to show this is to go to various locations in New Vegas and in Fallout 3 and try to figure out what the inhabitants eat.
Fallout 4 is really fun it's just a shitty rpg. Obviously the Fo games are known as rpg games so I don't blame people when it's just Skyrim with better gameplay.
