I liked bleach, one punch man, and a couple others friends have made me watch. I'm generally a fantasy nerd. I just can't stand whiner protagonists or ones that face zero adversity.

I loved Chainsaw Man. It feels oddly similar to the already mentioned Jujutsu Kaisen in some ways, which is also rather good, I just vibed with CM a bit more.
Cowboy Bebop if you've never seen it.
Kill La Kill is great if you don't mind the fanservice.
I also remember liking Psycho Pass, Death Note.

Watch Mob Psycho, it's written by the same author, it's literally just OPM without the loss of quality midway through, kino all the way to the ending. A bit of a whiner protagonist tbh, still an insanely likable cast of characters.
I'm not that much into fantasy but Dorohedoro was fantastic, probably the best world building in anime. It's on Netfix too. Everything else is also great too, although the 3d animation does take some time getting used to.

You're one of the few who say so, most online seem to agree the Mob is better than OPM. Funnily enough, I actually agree that peak OPM is better than Mob although only to a minor extent but any season of Mob is better than S2 of OPM.
In terms of writing the manga itself became worse somewhere between the Boros arc and the tournament arc. The pacing was getting noticably worse by then.

If you want fantasy with adversity, Grimgar is one of the best. I'd say it's one of the more realistic takes on being an adventurer in a fantasy world with real danger and consequences, without becoming suffering porn/a gorefest.
If you have Netflix, you should also give Dungeon Meshi a try too. The story and worldbuilding are the best I've seen in anime and maybe in fantasy works in general.

Gintama if you want peak comedy anime.
While not a fantasy show, if you want action and over the top fights, Kill la Kill is an absolute classic. Gurren Lagann is in a similar vein with the show being mostly just high energy, big hype, over the top fights but with mechas.
12 kingdoms for OG shit, Freiren at the Funeral for more modern but solid takes on the genre, log horizon for "trapped in an mmo", ascendance of a bookworm for a more realistic stakes show (sickly protag trying to raise money to buy books in feudalism shit village), re:zero is about a guy who dies incessantly to resurrect in the past and move to try and gain optimal outcomes (suffer porn but its well loved since mc is a realistic teen who mainly relies on resets to engineer a path to success). This genre is really overabundant and full of trash, have fun dumpster diving.

I like Gintama but I have a hard time recommending it. It's too self-referential about an age of anime that is unknown to most modern watchers and
is the worst. I remember I had my first big laughs in the nabe shogun episode (25 I think). I can't tell someone to invest 8 hours until a show gets good.

Even if you dont get them all its still quite funny from potty humor and writing alone. You dont need to understand the references to nausica of the wind valley to enjoy the episode about uncleanliness, it can go totally over your head and remain hilarious.
Hence the warning. Regardless, gintama is objectively one of the better shows on crunchyroll.

I'd say Demon Slayer but one of the side characters is fricking annoying.
Frieren doesn't face a lot of adversity but its a more character focused.
Konosuba if you want a Parody of the Isekai genre, and a summary of essentially the entire Genre.
Goblin Slayer is good, though it only has two edgy episodes despite being billed as edgy.
Dungeon of Black Company is an isekai where the protagonist is overpowered because he understands Capitalism.
Undead Murder Farce is about a head and an oni solving mysteries.
Coffin Princess Chaika has a great S1 and is about a girl trying to gather her fathers remains, and she has amnesia.
Blast of Tempest, its modern, but a mage is trying to fight against her family who is trying to cause the apocalypse.
The Saga of Tanya the Evil - WWI never happened due to people having magic, and its essentially WWII with mages and the Kaiser is in charge.
Spice and Wolf - Both the original and remake are good if you want something slow without a lot of fights. Its comfy and talks a lot about economics.
Tsukimichi - MC is Overpowered but he gets out played regularly. Its my favorite Isekai.

Assassination Classroom - A classroom of students needs to kill their teacher who is an Alien who blew up the moon. There is a lot of great character development.
Kill La Kill - if you can stand sexual fanservice, a vagrant school girl wants revenge for her Father's death.
Mobile Suit Gundam 00 or Mobile Suite Gundam Iron Blooded Orphans - Mecha, both are good starter Gundams, self contained, and a solid plot with solid Characters. 00 is about the Global War on Terror and IBO is better if you prefer more straight forward plot with raw violence.
MEGALOBOX is about boxing but with mechanical assistance.
SSSS.Gridman and SSSS.Dynazenon - mecha, that are big love letters to the Tokusatsu genre (Think Power Rangers). It involves an amnesiac boy who can turn into Gridman trying save his classmates from being erased by Kaiju.
Otherside Picnic - Its based on the Russian novel 'Roadside Picnic' that inspired S.T.A.L.K.E.R. But with Japanese myths.
Psycho Pass - There is a giant AI that predicts your likelihood of being a criminal. The first season is great, after that its hit or miss.
Captain Harlock - Space Pirates who deal with aliens invading if this is the 1978 series
Cowboy Bebop - classic and popular. Space bounty hunters who spend a lot of time chasing money and then spending it.
Gunslinger Girl - if you have gun autism
