There's some recipes for chinese stir fries out there that use baking soda to tenderize the meat, but if you forget to carefully rinse it off before cooking it, it tastes pretty bad.
Nobody cooks bacon like that. If you're going to do baked ham style, you do it in the oven. I've never heard of frying bacon with vinegar "to render out the fat".
