110 calories, 28g fiber, and 10g protein in a fricking burrito sized tortilla is insane. And they don't taste weird, they taste like a normal tortilla. If you put one side by side with a regular tortilla I'm not convinced I would be able to tell the difference.

They, and most products like them, are a total scam. Literally just test your blood sugar at an hour after eating them. It'll be the same increase (or close to it) as the regular carb version. Just because they're legally allowed to call their processed starch a "fiber" doesn't mean it's not getting converted into glucose.

it all matters, people who obsess only about calories are r-slurred because they want to reduce it to a single number in their head
its only a semi-useful proxy when shopping, but carbs 100% do matter if you're trying to lose weight or have enough energy to work out enough to get strong/jacked. Plus low-calorie speciality food is often jacked up in carbs and others hit to compensate.
