200g Handkäse, an onion, bit of olive oil, tons of vinegar, bit of salt & pepper.

Should probably have used more vinegar & let it marinate a bit longer.

The "music" Handkäse is supposed to be served with is often said to "come later". This is a euphemism for the flatulence that raw onions can provide during digestion.

Hmm... hard to describe. It barely has any fat but has a sort of a squishy texture. I would say texture wise it's more squishy than Halloumi, but without the squeekyness. That is texture only though. Smell it's more of a pungent smell. An slightly old Camembert is similar in regards to smell I'd say, but can be way worse. You often say that it smells like "sleeping feet" :marseyfeet:, but that is just the German idiom for "feeling pins and needles in my feet".

Taste wise it's not really that strong. Do you know what Quark is? It tastes similar - quite plain tbh. If not wikipedia says Quark is like "cottage cheese with water pressed out of it" or "unripened cheese curd".
