Ever since I started doing One Meal a Day to skinnymaxx during NNN, I find it especially important to prep my meals to avoid temptation. Yesterday, I almost ordered a slice of pizza. I know—how fricking shameful of me. Thankfully, I came to my senses and ate some lean chicken instead.
This week, I set out to meal-prep a salmon dish to cover 5 whole days of meals. I've never saved this much money and looked this good c:
Ingredients:
1.5 kilos of salmon
Zest of 1 lime and 1 orange (or two if you over-zest the first one like I did 😭)
Juice of the same lime and orange
Olive oil, salt, and garlic
Fresh garlic, a tablespoon of honey, and lots of chili flakes for that sweet, spicy kick
Side: Quinoa (1 cup), cherry tomatoes, onions, bell peppers—basically any veggie that's cheap and you like
I started by zesting a lime and an orange…or at least, I thought I was zesting. Turns out you don't want the white part because it's bitter. Go figure. I saved those two naked fruits for their juice and started over.
I mixed the zest with olive oil, salt, thinly sliced garlic, chili, and honey, then rubbed the salmon with this mix, aiming for a sweet and spicy glaze. I squeezed fresh lime and orange juice over the salmon, then randomly sprinkled a bit of soy sauce while it was cooking.
Bake it. Easy. I have, like, 30 thermometers now because I've burned weed about 10 times and lost a shit ton of money that way.
Quinoa? Made it.
