Over cook some macaroni, it needs to be a bit squishy to help bind it. Chop them up just a bit once cooled.

Sauce is a bechamel, butter and flour to make the roux. Some milk and chicken stock. Melt in Swiss after it thickens up. Dump in a handful of finely diced mushrooms. Garlic powder, onion powder.

Mix in with noodles, spread out on a pan or baking dish and cool for a couple hours.

After it's cooled scoop out a bit and gently squeeze into shape. Balls are easier and a more traditional shape, the 3 sided quenelle shape cooks better but is a bit harder to form.

Flour with salt and pepper.

Dip in egg wash.

Panko crumbs, season salt and a little chipotle powder for depth.

Fry
