RUSTIC AU GRATIN (SERVES 5+):

Ingredients: 4-7 white sweet potatoes (yams are fine, don't sweat the small stuff!); 1 or 2 large containers or heavy whipping cream; 1-1.5 blocks of Swiss cheese.

PROCEDURE:

Peel, wash, then chop sweet potatoes into 1/2 inch slices. Shred cheese. Keep ceramic or aluminum pan ready to receive the layers of potatoes and cheese. Boil one layer of potatoes in the cream until VERY SLIGHTLY tender. This is a double bake process.

Layer one is potatoes, then shredded cheese, then potatoes. Repeat until dish filled.

Preheat to 400°, douse with a "small" drizzle of leftover cooking cream along the sides of the pan, cover pan with aluminum, bake for 25 to 35 mins. Uncover only when cheese is definitely melted on top.
