Honestly it does look tasty, although that looks like a lot of peppermint and I'm not a huge fan of peppermint. Maybe if it were some kind of key lime mousse or something.

You could, although it might be worth pointing out that even key lime pie usually relies on food dye (the color of key lime juice is NOT that green, it's more of a yellow color).

It's not too important to color it, I cooked it myself and nobody really pays attention to the yellowish color, especially when theres meringue at top

Yeah the first time my parents cooked one they colored it like the recipe called for, but they obviously realized how pointless that was and didn't color it again.
