Basing expectations for GTA VI off of these games which are already out there, we can expect:
1. GTA VI to have environments that look as good as flight simulator games - It should be possible for GTA VI to pull this off as the area they have to map out is smaller than the planet Earth.
2. To have their own in house equivalent to path tracing active for GTA VI - This would create near photorealistic lighting for ingame characters and scenes. The hard part would be optimizing path tracing code to the extent that even your base ps5 can run it.
3. Character models somewhere around the past of us part 2. The hard part here would actually be maintaining character quality across NPC's. It is feasible taking into account that Horizon Forbidden West already pulled it off successfully in making their NPCs nearly as detailed as the main character.
4. Smart NPC behaviors - Something rockstar already has experience with since RDR2.
5. The most likely weak point for GTA VI would be game physics, where we have no way to know exactly how destructible the environment will be in game.
