I can't tell if he's actually doing it because it's too fast, but if you're in the rear you can mix in a j-stroke every 2-3 strokes or so and that will keep you straight. You basically turn the blade of the paddle at the end of the stroke while it's still in the water and do a little sideways stroke away from the boat. Also while you're in a river the current helps keep you straight a bit, but it's pretty easy to maintain a straight path paddling on one side even on flat water.

It's also good for keeping the boat straight if someone who doesn't know what they're doing is in the front.
