KC:D is what I would call polished Eurojank.
I played it at release and I liked it well enough and combat does have a bit of a learning curve but the game does become pretty easy once you get it down. The alchemy is fun to mess around with some, the lockpicking sucked from what I remember and the story was decent.

I can't think of anyone DtD wouldn't appeal to. The first hour or two (if you're slow) are kinda ๐ฌ but once shit opens up it's like nothing else in terms of "one more day" every 5 days when you remember you have things to do. I haven't been that obsessed with a game since NMS was new to me.
Dredge is phenomenal though. Lovecraftian fishing game, beautifully stylized, great ambiance, lots to do, solid core gameplay loop. I've bought and 100%'d it on two platforms. DTD is way better but Dredge is a joy in itself and I can't recommend it strongly enough. Both are very unique experiences that defy any sort of "it's like X" or "it's like X meets Y with a bit of Z" comparisons so they're weird to recommend but I do think you'll enjoy Dredge a lot.

Played this when it came out of early access, beat it in about 20hrs. It was sort of marketed as a morrowind-like, but it is more of a King's Field-like. Very solid, 7/10 experience. I recommend it.
And the combat was absolutely trivial when I played it, but they made some fixes since then.

Play it one one of the harder difficulties and remember to alchemy max for a more immersive experience. I regret only playing it on the second hardest difficulty. If you master parrying/countering you will pretty much never need to fear human enemies.

Maybe your power level is greater than mine but if you get 5 hours in and think you're not enjoying yourself, stop there because it does not get better and it's a 50 hour game.

It sorta is. It's by a different director, and I think he was obviously inspired by Dark Souls and the old 90s butthole From games. But I'd argue DS3 is more of a fan-game than DS2, as DS3 is just a re-hash of DS1 with more funding and better expectations, even if it's the same guy. So much of DS3 just feels like they were trying to remind you of DS1.
Meanwhile, DS2 is schizophrenic and gigantic. It's got a billion bosses (don't think one of them is any good); a million locations (each one of them incredible, and tangentially related to the others); and somehow coherent incoherent lore comparable to Elden Ring.
If you haven't played all of Scholar of the First Sin, then I pity you.

I've tried to play DS2 "properly" three times. I always get ~40 hours in feeling pretty good, exploring everything, doing the side quests etc, and then I lose the will to live and rush to the final boss. I can't remember which part specifically makes me want to stop playing, maybe it's around the dragon lair bit with all the bridges and little sky islands?

Two of the DLCs are great; the winter one's forelorn and cool but not worth playing more than once, and all the bosses are extra bad. But yeah, sounds like you're qualified enough to hate DS2 lol
