What's preventing Iran (or Russia,...) from shooting down those satellites? Are they out of reach for current weapons?

They don't have the ability to do that at a reasonable cost. Also that would result in more reaction from the US and allies.

The satellites get saturated while flying over the eastern US (and canada :p), but they are mostly unused elsewhere. So while they fly over iran they could provide bandwidth for iranians.

Yes, but iirc they also need a good amount of ground stations too, i dont know if there even is any there
