Let sit until yeast activates (it will form foam), about 5 to 10 min.

Add 2.5 cups or so of flour and 1.5 tsp of salt and knead.

Let rise for an hour or so. If you want flatter bread skip next step.

Take dough and fold it on itself over and over until it feels "tight". Put onto a baking pan and form into a ball, let rise again.

Bake at 460 or so for about 45 min. When you put it into the oven, put it on the upper rack. On the lower rack put a pan filled with water.
