I haven't seen too many slice-of-life anime, but the ones I have seen do have an overarching plot. They're just slow-paced and don't have too many action elements. There might be fantasy elements that are used as plot devices, but they aren't the main focus.
I'm not familiar with sitcoms like The Office or Friends, but from what I understand, they have even less of an overarching plot and are pretty popular.
Eh. It's mostly just a joke, but 90% of the SoL series that I've seen I dropped early for containing way too much filler. The only one I've ever liked was Gabriel Dropout. I actually found it to be pretty funny and clever at times. I love absurdist situational humor, and the concept of the angels being the opposite of angelic.
That's why you watch the SoL anime where it starts off that way and then next thing you know best girl grad student is facing off against a 14 year old who sexually identifies as a railgun.
