Well, if you're into action you should catch up on Re:Zero with that airing. If you're into romcoms, catch up on Yahari Ore no Seishun(I personally feel this show has already run it's course and had an okay ending point at the previous season, but maybe it's still got some juice left). Those two shouldn't be terrible, and I hate to just give you basically the top airing, but as someone who's usually read the manga of all the shows before they air, this season doesn't really have any risky or non-mainstream adaptions and it's mostly sequels.
If you haven't already though, watch Tower of God. It was adapted last season into a 13 episode anime and the story is exciting. If you read manga at all you definitely won't be able to help yourself from picking up where the show leaves off. It's the only Manhwua(Korean manga) that I'd put in my top 5 and none of the other stuff from Korea can even touch it. I'd put good money on it being better than anything that'll air this season, so definitely watch that instead of drudging through Re:Zero's painfully long arcs just to watch something that's current.
I actually never finished season 2 of Yahari Ore no Seishun so I might go back and finish that and go from there. I also never bothered with Re:Zero because it's Isekai. I guess I'll bite the hype bullet and watch Tower of God, it does look pretty good.
