I've been on a 100% powdered food diet since March 2017. It helped me lose weight and reach my body fat goal in the 10% range. This was achieved through diet alone with no exercise. I just kept track of CICO (calories in calories out). Counting calories is extremely easy with it.
Now, it's helping me gain lean muscle as I increased the calories and started bodyweight exercises.

I started with powdered soylent when it was version 1.6. I did it cold turkey for 30 days straight to see if I could simply maintain my weight which it did.
It took me about 2 weeks to get used to it. Within that two weeks, I went threw junk food withdrawals. My previous diet consisted mostly of cereal, fast food, and Filipino dishes.
I do not recommend going cold turkey. I'd recommend replacing 1 meal at first. Then when you are used to it, do more meals if you want.
After the 30 days, I wasn't 100% on meal replacements, but I did use it daily.
I was 100% only after I discovered the less expensive Joylent (Plenny Shake was called Joylent before the trademark dispute).
Plenny Shake has different flavors. Banana is my favorite. However, Plenny Shake is way grainier in mouth feel than Soylent. Soylent is probably the smoothest out there.

I think people tend to rationalize whatever their situation is, and even though privately they will tell you all the problems with said thing, to outsiders they will extol the virtues of whatever it is they are stuck with.

I think that's very judgmental and ignorant. There are many totally valid reasons to do so and even for those who choose to make it permanent, it's a lifestyle choice. Though you might disagree, I generally don't think I'm retarded nor do I believe most people would come to that conclusion about me. After I finished graduate school, I decided that I wanted to travel and see the world, so I bought a van and lived out of it for half a year while traveling across the country. Then, I got a different one and traveled across South America all the way down to Ushuaia, and back.
Living in a van was absolutely a "defining part of my life" during this time because it gave me the freedom to experience the world in a way that I found to be incredibly influential to my personal growth. So rather than making such a blanket claim about vandwellers, "no exception" as you put it, perhaps consider why some people might choose to do this (as well as the type of vehicle).
I mean, when you tell your intestines and stomach they are no longer needed for anything but the most basic diffusion things tend to get fucked up fast.
