When someone says "I love animals," which is more likely the case they either: 1) truly love every single animal on planet Earth, or 2) love the animals that humans keep as pets or generally find "cute"? I'd bet that #2 is far more likely. People say "I love animals" when they only love a specific few animals because it's far shorter and it would be incredibly annoying if people listed off exactly which animals they love every single time they wanted to tell people that they love animals. With that in mind, it's not hypocritical at all.

And, let's be honest, no one loves all animals. Who loves ticks? Mosquitoes? Tape worms? Mangoworms?
