If I get charged with stealing a car and found innocent, the state can't arrest me and charge me for stealing the same car again. But if I shoot and kill a guy, they can charge me with both reckless discharge of a firearm and murder. The charges for Chauvin are like that because each charge requires different elements.

2nd degree Manslaughter: Chauvin acted with culpable negligence which created a situation that led to Floyd's death.

3rd degree murder: Chauvin was aware that he was doing something that could lead to Floyd's death, but did so anyway "depraved indifference"

2nd degree murder: also known as felony murder, Chauvin killed Floyd while committing a felony.

There are appeals where a higher court just reviews the facts as found by the lower court and either makes a new ruling or sends it back down for the court to tweak the judgment. That's more common outside of criminal cases.
