The South Americans coming to Canada are in a better position compared to the most recent wave of Indians. They know construction trades (welding, plumbing, electrical work, technicians). That's what's really in demand. I advised my cousin in India to come to Canada and pursue a mechanics course for that reason. His school performance is just average, a generic diploma in business or arts will not be useful.

Meanwhile I was at this cafe a couple of weeks ago where an Indian dude was going on giving a trillion orders to the server and then walked right into the kitchen. Dude wanted his avocado sometjing exactly how he wanted. Once he stepped out we could hear the cooks and wait staff cussing hi behind his back for being such a picky jerk. Indians are no less in being downright entitled at times. This was in Mumbai.

I assume you are white. I used to work as a waiter while in college, and I hated serving Indian customers. They would snap their finger at me, would drive me insane. OP says he's an American, so they're probably talking about serving Indian immigrants in the US, where it's customary to tip, but Indian immigrants have a reputation for being "cheap" and not tipping. Tbh, OP is the first American service worker I've heard say something nice about Indians; usually, Americans say Indians are the "worst" to serve or work with.

That’s because in US you’re actually paying the salary and not a tip. American waiting staff has to deal with below minimum wage pay and expect tips.
