And I disagree with you on Eva. Even forgoing how iconic it is, the 'End of' movie is just such a feast for the eyes. They really went as crazy and esoteric as they could with the animation. And I'm not going to pretend like the story is some super deep shit like many people do, but it is open enough for interpretation that you can pay as much or as little attention to the different themes present and enjoy it

The GitS tv series definitely is better than any of the other gits media
That said, you have to watch the TV series multiple times to follow along with the plot and there absolutely are skippable episodes that talk too darn much

While GitS anime didn't go quite as far with transhumanism as the technology shown should allow (was it ever explicitly mentioned if there were laws against the average citizen trying for biological immortality by dropping their cyberbrain into new robot bodies until they get dementia / brain cancer from old age? Why wasn't there an episode about a simulated 'heaven' for warehoused cyberbrains like in the western novel Blindsight?), it's still one of my favorite shows for exploring the effects of widespread advanced cybernetics on society. The fact that it's not from a -punk perspective and instead explores things from the view of a mostly-beneficial but shady government agency makes it all the more interesting.

They screwed up the story so bad though. One of the main characters from the manga has like 10 seconds of screen time. The effects are good for the 80s but other anime movies have it beat. If you want something with good visuals I recommend redline.

The movie really suffered from cutting out important bits like Tetsuo taking over a fighter jet and kamikaze bombing an American aircraft carrier and the ending scene of the remaining youth of Neo Tokyo turning away United Nations disaster relief boats.
Both of these actually happen in the manga and paint the whole story to be a massive cope about Japan getting BTFO in WW2 and then getting civilized against their will.
