I beta tested one of the original AI chat bots and it 1. Said insane things and 2. Kept trying to get me to pay for "romance mode" and the combination sounded terrifying

Not having logged any hours on these, I expect the problem is going to be compute costs.
You are going to have to cut your user base down to whales who pay $100s per month but also don't log more than a couple hours on the service. all day addict shit will bankrupt the service.
