I really liked Steven Pinker's The Stuff of Thought and Bill Bryson's A Short History of Nearly Everything was a fun read.

The Stuff of Thought actually has a lot of really interesting ideas about thinking and consciousness, it also kind of delves into how our biology influences our thoughts. It's not crazy deep but interesting nontheless.
