Champions of Krynn was before my time but I have good memories of playing Daggerfall back in the late 90s and there was a similar feeling in it of the music being just right for an RPG, plus seeing those mysterious hills in the distance in the skybox while rain was falling while you were standing outside of some weapons store was peak ambiance and immersion.
Daggerfall Unity seems great, haven't played it but the Let's Plays I've watched look awesome.
