i'm not really a seafood enjoyer :marseypoor: but my wife is, so based on my experience eating singapore/chink seafood the freshness of the ingredients (since most of the dishes aren't raw it might be possible to get away using not so fresh nonsense) and how the sauce (most chink seafood dishes are doused with lots of sauces, especially singapore's chilli crab) is made probably contributes to the taste :marseywerebackchingchong: had some farm to table fish a few weeks ago and it was :horny:

The last time I was in Peru, I ate some cebiche at a small waterside restaurant in Iquitos. They must have fricked up the seafood pretty badly because they fricked me up right royally.

I ended up on a saline drip from dehydration.
