Apparently AI is bad at counting because it doesn't think it terms of units (like words) like humans, but tokens (the tokens it uses to build language). Also keep in mind the code example it posted is straight up hallucination, it doesn't have access on the user end to its own code.

I think it fits because these models present them with the ultimate conviction. They truly believe these things they're saying, even if they're completely made up (not that they have sentience).

They don't believe. They can't hallucinate. It's not even AI. They're just code that garble words together and sometimes spits out something coherent.

"Count how many words are in this sentence" is actually a problem that's been identified as something LLMs can't really do. So much so that in papers introducing external tools that LLMs can utilize there's often a 'count the words' function.

AI can't do that. All it does is guess the next word. You can actually slow it down to reading speed and a lot of the time guess the word it's gonna write before it does. Because of this when you ask "How many words in X" it doesn't actually do math. It just looks thru it's dataset to see what words are often used after the phrase "How many words in" and throwing them up on screen.
