Literally just write your notes in fricking text files using your preferred text editor (vim). Note taking apps are for women and UX designers, also known as fricking r-slurs

For grad school work I just had a billion pages of notes in one note because it works, it's easy to attach pictures, and pdfs, it syncs to all my shit, surprisingly for a M$ product the search actually works, and they were paying for Office anyway. I also did my class notes in there for similar reasons. It just works, simple as.

OneNote is up there with Excel, somehow Microsoft has made a good product and hasn't ruined it.

It's like with Google products. If you just make enough of them, eventually you're not going to frick it up just out of pure chance.

My only problem with onenote is that it's quite slow to open and get going. I use it for most of my notes, but my grocery list stays on apple notes because it's just more convenient.

Inline images and latex are genuinely useful in some cases. I wonder if emacs org mode canc do it, obsidian is nice in theory but it's electron.
