You can still update the defaults to whatever you want, but you need to use the official dialog to do so - what this actually does is remove a program's ability to set itself as the default.

I actually get why they'd want to do that. I'd bet that a ton of malware does this sort of thing. But they should have instead had a solution that just makes it really clear and requires the user to "consent" (ie the UAC dialog).
