Mint is easy, Ubuntu is boring and I will give you shit for it but it's also a good choice. You don't need to code to learn Linux, but you do need some willingness to learn to troubleshoot issues.

I switched to KDE Neon. Asides from issues because of my ancient Nvidia GPU it's been rock solid.

Yeah I mean Ubuntu has its issues, but it's still the easiest to recommend. No one really has a good set-and-forget LTS offering like Ubuntu- and RHELs repos are kind of butt.
