MINIX is basically dead at this point, not that it was ever an interesting microkernel in the first place, Torvalds stays winning.

It's very interesting from an educational standpoint.

Even if you want to use the old versions for pure educational purposes, it’s written for a C compiler no one uses.

xv6 might be better suited, although it lacks the micro kernel stuff and is also written in outdated C.
