I'm new to this franchise, are the different entries like different remakes of the same story but with different plot points, or there is a clear continuity between each entry?

sort of spoilers: there's an original show, a remake/retelling of the last 2 episodes of the show, then a final movie that ends the show. the rebuild movies are portrayed as remakes but in the last movie turns out they're the next 'cycle' of the show

Just watch NGE and The End of Evangelion and don't bother with the Rebuilds. EoE is an alternative ending to the TV series.

EoE is a remake of episodes 25+26 of the NGE series which they ran out of time to actually animate in the original run. Just skip them and watch EoE instead. Rebuilds aren’t worth watching unless you really love Eva and really hate yourself.
