i’m gonna go full animestrag here since i’m a massive one piece fan, and have made many posts about the fan drama here. i wish anime and never become mainstream and more acceptable to admit to watching. the last series i watched, tatami galaxy, was such a breath of fresh air compared to the seasonal sewage that’s pumped out every few months. the top charts in myanimelist are more useless than ever as people genuinely believe kaguya and oshi no ko are better stories than fruits basket or kizu3 (or any monogatari for that matter). call me a sweaty elitist oldstrag, idc i’m right.
the manga industry is almost worse, watered down to wish fulfillment “rom-coms” and isekais. “i’m kicked out the heros party but am suddenly OP” is the new trend. shueisha licensed series seem to be the only ones trying to do anything different, but so many fail to break into something new. incredibly formulaic and repetitive. the industry needs more mold-breakers like dandadan, csm, even the isekai about the doctor is original enough to be intersting. original plots, and less-than-archetypal protagonists.
twitter artists think they can be the next big thing and publish 2 pages a week with one sentence of dialogue and call it a chapter. even after blocking accounts they still populate my feed and need to eat lead

MAL is controlled by shounenstrags and fujoshits, of course it's useless. Also comparing stuff to Tatami Galaxy or Monogatari is pretty unfair, they're considered some of the best anime series to have ever existed, almost everything isn't going to hold up.
There's a bunch of interesting and different manga that are still coming out, you just have to look a bit harder for them. Have you read Heterogeneous Linguistics?
I'm just glad Shamiauthor is alive again and putting out chapters. Even though season 2 wasn't as good as the first, a third season would hit some of the best parts of the manga so far and it's unlikely that'd happen if the author was actually fricking dead.

Unironically just random threads on /a/ is where I find most my new stuff, since a lot of the time for the niche stuff it's just some random anon translating and posting it there first. Every so often there'll even be a thread that's just "shill whatever new unknown manga you're liking" that's a great spot to find new stuff. /a/ is how I found Heterogeneous Linguistics, The Hero The Dragon and the Courier, Machikado Mazoku, Dungeon Meshi, and a few more originally.
