I like it a lot, The main character can be annoying but you have to remember he's a 14 year old who grew up without a dad and isn't some super brave MC who loves what he's "chosen" to do like a lot of other anime.
It's seen as foundational to a lot of modern anime.
the ending (last 2 eps) are notoriously bad. (unless you like high concept BS art, then you'll love it)
What I love about it is the relationships between characters and the worldbuilding put a lot of modern anime to shame.
There is some drama about how to watch the series, I would just watch the OG series, then watch End of Evangelion (EoE is basically a replacement of the last 2 episodes, making them less high concept.). After that you can watch the rebuilds of evangelions, which are basically just reimaginings of the series. The first two movies are the first half of the show, then the 2nd two movies change a lot, and as is tradition the last like hour of the 4th movie is garbage. The first half though is really good.

It's amazing how having literally any vision at all makes your series stand head and shoulders above almost everything else. Assuming you aren't being an intentional contrarian it does a good job of it's plot of, "14 year old kid put into the impossible situation of being humanity's only hope (and a pawn of a bunch of illuminati frickheads and his dad)"

I watched it when I was 14 and found it very relatable at the time. They knew exactly how to appeal to the sexually frustrated depression that is the psychology of a 14 year old boy.
If you're not 14 tho I'm not sure how enjoyable it's gonna be. Still has some nice surreal scenes I suppose.

It's also like the only anime I ever watched entirely. I think I got through 2 seasons of Death Note too once but otherwise anime never caught my interest. NGE though I was almost obsessed with at the time.

No. It was very mid, but then the last 4 or 5 episodes they completely ran out of money and it devolved into an unwatchable mess. It pretends to be "deep" but only in a way 14 year olds would think because after all it's a fricking anime. Hard pass.
