The old drawn animation had a great vibe that the new anime seemingly can't replicate. Hard to say what that was but one thing I notice is the shadows which in old anime tend to be much harsher, the colors toned down. Generally they are more gritty.

Also, for some reason a lot of old anime had some really great industrial/machine elements (like this one) and as a man that just hits the right spot. I loved that aspect in Akira.

But he was not the only one.

EVA had plenty of machinery on display for example. In general you would see more vehicles (hand drawn to boot) back in the day, like in Sitnkbomb (which I just learned is a segment from this movie, so not the best example). Even in Goldenboy the bike chase is something you wouldn't see today, the vehicles would be seen as an obstacle to overcome with CGI, when in older anime they are drawn with care that makes them feel real.

My theory would be with Japan being a very industrial country in the 20th century most of them would have grown up around factories and either worked in them themselves or had close friends are relatives who did.

The 1990s were the the peak of artistic animation and we didn't know it. Nothing today looks this spot on and gritty

To be fair, technology has evolved a fairly large amount since then. As a result, the skill ceiling has been vastly lowered, and I do find that a lot of anime do look the same.

Then you have fricking Chainsaw Man, which is probably one of the best animated series since stuff along the lines of Spriggan, with that famous little unloading a handgun scene running around on Shorts.
