The story of Onan got twisted into being about how you aren't supposed to masturbate, so you're correct that Onanism means masturbation. But it's foundationally wrong.

Not really, it's the spilling of seed in vain - in Judaism, the sin was the disobedience towards God, not jerking off. In Christianity, it is in theory still a sin since to lust after one is not really any different from fornicating.

I'm pretty sure I read scholars are confident the story of Onan came after the legal practice of dead-brother-wife-fricking was already in place for a couple centuries as justification.

I'd believe it. Isaac kills Jacob in the original story (Jahwist author). It even describes him coming down by himself after. Later authors (Elohist) add sacrificing the ram instead. Also a retcon to justify the end of human sacrifice.
